A breakfast dinner saves the day & money

Some days just before grocery shopping, when the food is getting low, and you're too tired to cook, a breakfast dinner is the solution. It beats going out to eat and spending money, right?

For "breakfast dinners" we may cook omelets, pancakes, grits, biscuits, cereal w/fruit, turkey bacon, and eggs.

Do you ever have breakfast dinners? If so, what do you cook?

    Or you can mix the two. How about chicken a la king king over unsweetened waffles, for example?

    I eat grits and toast. I actually love to eat that and do so often.

    Yup - Scrambled egg white sandwiches (tho' I tend to do this only when DH is out of town). I usually add a veggie on the side, which may not technically qualify as breakfast (except that sometimes I have a salad in the AM).

    No, but it's a great idea! I'll have to see if my family is interested in trying it. We do make dinner-breakfasts (breakfast burritos) some weekends. Smile
